- 1 pound shrimp, peeled and deveined
- 1 bunch asparagus, cut into 2-inch pieces
- 8 ounces mushrooms, sliced
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: sesame seeds for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Add the shrimp and cook until they turn pink, about 2-3 minutes.
- Add asparagus and mushrooms to the skillet, stir-frying for 5-7 minutes until vegetables are tender-crisp.
- Pour in the soy sauce and stir to combine.
- Season with salt and pepper to taste.
- Serve immediately, garnished with sesame seeds if desired.
Notes
For added flavor, squeeze fresh lemon or lime before serving, or add red pepper flakes for heat. This stir-fry can also be made with chicken or tofu if preferred.
