Description

A quick and healthy stir fry featuring tender chicken and fresh zucchini, perfect for busy weeknights.


Ingredients

Scale
  • 1 lb chicken breast, sliced
  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes.
  3. Add the minced garlic and sliced zucchini, cooking until the zucchini is tender, about 3-4 minutes.
  4. Stir in the soy sauce and season with salt and pepper to taste. Cook for an additional 1-2 minutes, stirring frequently.
  5. Serve hot, garnished with sesame seeds if desired.

Notes

Prep chicken and zucchini a day in advance for quicker cooking. Leftovers can be stored in the refrigerator for up to 3 days.
