- 1 lb chicken breast, sliced
- 2 medium zucchinis, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Optional: sesame seeds for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the sliced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Add the minced garlic and sliced zucchini, cooking until the zucchini is tender, about 3-4 minutes.
- Stir in the soy sauce and season with salt and pepper to taste. Cook for an additional 1-2 minutes, stirring frequently.
- Serve hot, garnished with sesame seeds if desired.
Notes
Prep chicken and zucchini a day in advance for quicker cooking. Leftovers can be stored in the refrigerator for up to 3 days.
