Description

A quick and easy taco salad featuring Doritos, seasoned ground beef or turkey, and fresh veggies, perfect for busy weeknights or gatherings.


Ingredients

  • 1 bag of Doritos
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 head of lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup black olives, sliced
  • 1 cup corn (canned or frozen)
  • 1/2 cup ranch dressing or taco dressing

Instructions

  1. In a skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess grease.
  2. Once the meat is browned, add in the taco seasoning and follow the package instructions.
  3. In a large mixing bowl, combine the chopped lettuce, halved cherry tomatoes, shredded cheese, sliced black olives, and corn.
  4. Add the cooked meat to the vegetable mixture. Stir it all gently.
  5. Just before serving, crush the Doritos into smaller pieces and fold them into the salad.
  6. Drizzle your preferred dressing on top and serve immediately.

Notes

Make-ahead by cooking the meat and preparing the veggie mix a day in advance. Store everything separately in the fridge.
