- 1 lb chicken breasts
- 1 cup long-grain white rice
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 cup chicken broth
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Place chicken breasts in the bottom of the slow cooker.
- Add rice, black beans, corn, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, shred the chicken inside the pot and add cheese if using.
- Garnish with fresh cilantro before serving.
