Description

Ingredients

  • 1 lb chicken breasts
  • 1 cup long-grain white rice
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Place chicken breasts in the bottom of the slow cooker.
  2. Add rice, black beans, corn, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, shred the chicken inside the pot and add cheese if using.
  6. Garnish with fresh cilantro before serving.
