Description

Cozy Spicy Buffalo Chicken Stuffed Peppers filled with creamy, zesty chicken and topped with melted cheese, perfect for quick weeknight dinners.


Ingredients

  • 4 bell peppers (any color)
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1/2 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and carefully remove the seeds.
  3. In a large mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, half of the cheddar cheese, chopped green onions, salt, and pepper. Stir until well blended and creamy.
  4. Fill each bell pepper generously with the chicken mixture, pressing down slightly to pack the filling.
  5. Arrange the stuffed peppers upright in a baking dish and sprinkle the remaining cheddar cheese on top.
  6. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is bubbly and golden.
  7. Serve hot and enjoy!

Notes

Make the filling ahead of time and refrigerate. Use rotisserie chicken for a quicker meal.
