- 4 bell peppers (any color)
- 2 cups cooked shredded chicken
- 1/2 cup buffalo sauce
- 1/2 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and carefully remove the seeds.
- In a large mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, half of the cheddar cheese, chopped green onions, salt, and pepper. Stir until well blended and creamy.
- Fill each bell pepper generously with the chicken mixture, pressing down slightly to pack the filling.
- Arrange the stuffed peppers upright in a baking dish and sprinkle the remaining cheddar cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is bubbly and golden.
- Serve hot and enjoy!
Notes
Make the filling ahead of time and refrigerate. Use rotisserie chicken for a quicker meal.
