Description

A bright and colorful salad made with fresh romaine, cherry tomatoes, cucumbers, and chickpeas, dressed with a zesty lemon vinaigrette.


Ingredients

  • 6 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Chop the romaine lettuce, cherry tomatoes, cucumber, and red onion, and place in a large bowl.
  2. Add the chickpeas, parsley, and feta cheese to the bowl.
  3. In a smaller bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad mixture and toss gently to combine.
  5. Serve immediately as a main dish or refreshing side.

Notes

Make the salad in advance but keep the dressing separate until ready to serve for optimal freshness.
