- 2 boneless, skinless chicken breasts
- Salt and pepper (to taste)
- 1–2 tablespoons olive oil
- 4 slices of your favorite bread (sourdough or ciabatta)
- 1/2 cup basil pesto (store-bought or homemade)
- 4 slices of mozzarella or provolone cheese
- Fresh arugula or spinach (for a crisp bite)
- Optional: sun-dried tomatoes, avocado slices, or turkey bacon for added flavor
Instructions
- Preheat your skillet or griddle over medium heat.
- Season the chicken breasts generously with salt and pepper on both sides.
- Drizzle olive oil onto the preheated skillet and add the chicken. Cook for about 5-6 minutes on each side or until the chicken is cooked through and has a beautiful golden crust.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing it thinly.
- In the same skillet, place your first slice of bread. Spread a generous spoonful of pesto on top.
- Layer with a slice of cheese, followed by the sliced chicken, arugula, and any additional toppings you like.
- Top with the second slice of bread and press down gently.
- Cook for about 2-3 minutes until the bottom slice is golden brown and the cheese is starting to melt. Carefully flip and repeat on the other side.
- Remove the sandwich from the skillet, slice in half, and enjoy the ooey-gooey goodness!
Notes
Customize with your favorite toppings or variations to suit everyone’s taste. Make ahead by marinating chicken in pesto for more flavor.
