Description

A delightful Trifle that balances indulgence with nostalgia, featuring layers of sponge cake, custard, and whipped cream perfect for gatherings.

Ingredients

Scale
  • 1 pound sponge cake or pound cake, cut into cubes
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 cup non-alcoholic fruit juice (like apple or grape) for soaking the cake
  • 2 cups custard (store-bought or homemade)
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Prepare the ingredients: Begin by gathering your ingredients and cutting the sponge cake into cubes. Wash the berries and set aside.
  2. Soak the cake: Pour the non-alcoholic fruit juice over the sponge cake cubes and let them soak for about 10 minutes.
  3. Layer the trifle: In a large, clear trifle dish or individual serving glasses, layer half of the soaked cake cubes at the bottom.
  4. Add custard: Spoon half of the custard over the cake layer, smoothing it out to create a lovely finish.
  5. Berry goodness: Scatter half of the mixed berries over the custard.
  6. Whip it good: In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Then, gently spread half of the whipped cream on top of the berries.
  7. Repeat layers with the remaining cake, custard, berries, and whipped cream, finishing with a final dollop of whipped cream on top.
  8. Chill and serve: Cover the trifle and let it chill in the refrigerator for at least an hour.
  9. Garnish: When ready to serve, garnish with fresh mint leaves for a touch of elegance.
