Description

A cozy and healthy one-pan dish blending sweet potatoes, ground turkey, beans, and a sweet-and-spicy mustard honey sauce, perfect for busy weeknight dinners.


Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes, with juice
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes and cook until slightly tender, about 5-7 minutes.
  3. Next, add the ground turkey and cook until browned.
  4. Stir in the black beans and diced tomatoes with chili powder, garlic powder, salt, and pepper.
  5. Cook for another 5-10 minutes until everything is heated through.
  6. In a small bowl, mix the Dijon mustard and honey.
  7. Drizzle the sauce over the skillet mixture just before serving.
