Ingredients

- 2 medium zucchinis
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 onion, sliced
- 1 bell pepper, sliced
- 1 cup mushrooms, sliced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Optional: sesame seeds for garnish
Instructions
- Wash and slice the zucchinis into thin rounds.
- Heat olive oil in a pan over medium heat.
- Add minced garlic and sliced onion, sauté until fragrant.
- Add the bell pepper and mushrooms, cooking until softened.
- Stir in the zucchini and sauté for about 5 minutes until slightly tender.
- Pour in the soy sauce and sesame oil, mixing well.
- Season with salt and pepper to taste.
- Cook for another couple of minutes until everything is well combined and heated through.
- Serve warm, garnished with sesame seeds if desired.
Notes
Chop all vegetables ahead of time for quick cooking. Don’t overcook zucchini to maintain texture. Can be prepared in advance and stored in the fridge for meal prep.
