- 1/2 cup chia seeds
- 2 cups almond milk (or your preferred milk)
- 1/4 cup honey or maple syrup (to taste)
- 1 cup plain Greek yogurt
- Zest from 2 lemons
- Juice from 2 lemons
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a large mixing bowl, combine the chia seeds and almond milk. Stir well to ensure there are no clumps.
- Allow the mixture to sit for about 5 minutes, then stir again.
- In a separate bowl, whisk together the Greek yogurt, honey or maple syrup, lemon zest, lemon juice, vanilla extract, and a pinch of salt until smooth and creamy.
- Gently fold the thickened chia seed mixture into the yogurt mixture.
- Divide the pudding into small serving containers, cover, and refrigerate for at least 2 hours or overnight.
- When ready to enjoy, stir gently and add your favorite toppings.
