Description

A creamy, no-bake lemon pudding made with chia seeds and Greek yogurt, perfect for any occasion.


Ingredients

  • 1/2 cup chia seeds
  • 2 cups almond milk (or your preferred milk)
  • 1/4 cup honey or maple syrup (to taste)
  • 1 cup plain Greek yogurt
  • Zest from 2 lemons
  • Juice from 2 lemons
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine the chia seeds and almond milk. Stir well to ensure there are no clumps.
  2. Allow the mixture to sit for about 5 minutes, then stir again.
  3. In a separate bowl, whisk together the Greek yogurt, honey or maple syrup, lemon zest, lemon juice, vanilla extract, and a pinch of salt until smooth and creamy.
  4. Gently fold the thickened chia seed mixture into the yogurt mixture.
  5. Divide the pudding into small serving containers, cover, and refrigerate for at least 2 hours or overnight.
  6. When ready to enjoy, stir gently and add your favorite toppings.
