- 1 cup white rice
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1 packet onion soup mix
- 1 cup sour cream
- 1 cup shredded cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the cream of chicken soup, chicken broth, onion soup mix, and sour cream in a large mixing bowl. Mix well until smooth and creamy.
- Spread the white rice evenly across the bottom of a greased 9×13 inch baking dish.
- Place the chicken breasts on top of the rice in a single layer, and season generously with salt and pepper.
- Pour the soup mixture over the chicken and rice, ensuring everything is covered.
- If desired, sprinkle shredded cheese on top for an extra layer of gooey goodness.
- Cover with aluminum foil and bake for 1 hour.
- Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through, and the rice is tender.
- Let it cool a bit before serving.
Notes
This casserole can be assembled the night before and refrigerated. Use rotisserie chicken to cut down on prep time.
