Description

A comforting and fresh take on the classic BLT, this avocado pasta salad is perfect for busy weeknights and gatherings, combining creamy avocado, turkey bacon, and vibrant cherry tomatoes.


Ingredients

  • 8 ounces pasta
  • 1 ripe avocado, diced
  • 4 slices of turkey bacon, cooked and crumbled
  • 2 cups cherry tomatoes, halved
  • 2 cups romaine lettuce, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, diced avocado, crumbled turkey bacon, cherry tomatoes, romaine lettuce, and red onion.
