Description

A comforting Greek-inspired dish featuring creamy feta and tender roasted potatoes, perfect for family dinners or gatherings.


Ingredients

  • 2 pounds Red potatoes, washed and halved
  • 8 ounces feta cheese, crumbled
  • 1/4 cup olive oil
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: Fresh parsley or additional herbs for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the halved potatoes with olive oil, minced garlic, lemon juice, thyme, salt, and pepper in a large mixing bowl.
  3. Transfer the potatoes to a baking dish, spreading them out in an even layer.
  4. Scatter the crumbled feta cheese over the potatoes.
  5. Place the baking dish in the oven and roast for 35-40 minutes.
  6. Remove from the oven, garnish with fresh parsley or herbs, and serve warm.

Notes

You can prep the potatoes in advance and store them in the fridge until you’re ready to bake. Leftovers can be stored in an airtight container for up to 3 days.
