Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt in a medium bowl until well combined.
- Beat the softened butter, brown sugar, and granulated sugar together in a large bowl until creamy and light.
- Add in the egg, molasses, and vanilla extract. Mix until everything is combined and smooth.
- Mix in the dry ingredients gradually until just combined—do not overmix!
- Fold in the white chocolate chips, creating a delicious contrast to the spicy cookie dough.
- Scoop large tablespoons of dough onto the prepared baking sheet, leaving a few inches between each scoop for spreading.
- Bake for 10-12 minutes, or until the edges are set but the center still feels soft to the touch.
- Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack.
