Ingredients

  • 2 cups cooked and chopped chicken breast
  • 4 cups mixed greens (spinach, romaine, or kale)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, diced
  • 1/2 cup corn (canned or frozen)
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup BBQ sauce
  • Salt and pepper to taste
  • Olive oil (optional for dressing)

Instructions

  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, corn, and black beans.
  2. Add the chopped chicken on top, spreading it with care.
