- 1 lb beef sirloin, thinly sliced
- 4 cups cabbage, shredded
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons peanut butter
- 2 tablespoons hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Cooked rice for serving
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the beef and cook until browned, about 3-4 minutes.
- Add the garlic and ginger, cooking for an additional minute until fragrant.
- Stir in the cabbage and bell pepper, cooking until just tender, about 2-3 minutes.
- Mix together the peanut butter, hoisin sauce, and soy sauce until smooth.
- Pour the sauce over the beef and vegetables, tossing to coat evenly.
- Serve hot over cooked rice.
Notes
You can prepare the beef and veggies in advance, then stir-fry when you’re ready to eat. Store leftovers in an airtight container in the fridge for up to 3 days.
