Description

A comforting Beef and Cabbage Stir Fry with vibrant vegetables and a rich, creamy sauce, perfect for busy weeknights.


Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 4 cups cabbage, shredded
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons peanut butter
  • 2 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Cooked rice for serving

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the beef and cook until browned, about 3-4 minutes.
  3. Add the garlic and ginger, cooking for an additional minute until fragrant.
  4. Stir in the cabbage and bell pepper, cooking until just tender, about 2-3 minutes.
  5. Mix together the peanut butter, hoisin sauce, and soy sauce until smooth.
  6. Pour the sauce over the beef and vegetables, tossing to coat evenly.
  7. Serve hot over cooked rice.

Notes

You can prepare the beef and veggies in advance, then stir-fry when you’re ready to eat. Store leftovers in an airtight container in the fridge for up to 3 days.
