Description

A delightful cake with layers of fluffy cake, rich cream cheese frosting, and fresh berries, perfect for summer celebrations.


Ingredients

  • 1 (8oz) package cream cheese, softened
  • 1 1/2 sticks (3/4c) unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 3 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 tablespoon vanilla extract
  • Two 8-ounce packages cream cheese, softened
  • 2 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 3 cups heavy whipping cream
  • Approximately 1 cup fresh blueberries
  • Approximately 1 1/4 cup sliced fresh strawberries
  • Additional whole strawberries and blueberries for decoration

Instructions

  1. Preheat the oven to 325°F and grease three 8-inch pans.
  2. Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
  3. Combine buttermilk, oil, and vanilla extract in another bowl.
  4. Add softened butter and cream cheese to the mixer and mix until smooth.
  5. Gradually add sugar and mix until fluffy.
  6. Add eggs one at a time, mixing until fully incorporated.
  7. Alternately add flour mixture and milk mixture, starting and ending with flour.
  8. Divide cake batter evenly between the prepared pans.
  9. Bake for 25-28 minutes until a toothpick comes out clean.
  10. Let the cakes cool in the pans for 5-10 minutes, then transfer to a wire rack.
  11. Prepare the Chantilly cream by freezing the mixing bowl and beaters for 15 minutes.
  12. Beat the cream until stiff peaks form.
  13. Mix together cream cheese, powdered sugar, and vanilla until smooth.
  14. Fold cream cheese mixture into the whipped cream.
  15. Layer the first cake with Chantilly cream and top with berries.
  16. Repeat with the second layer and finish with the third layer on top.
  17. Frost the entire cake with remaining Chantilly cream.
  18. Freeze the cake for 10 minutes for a smoother finish.

Notes

Cake layers can be made a day in advance. Use a warm knife for clean slices.
