- 1 French baguette
- 2 cups ripe tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup balsamic vinegar
- 1/2 cup grated Parmesan cheese
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the baguette into 1/2 inch pieces and place them on a baking sheet.
- Brush each slice with olive oil and sprinkle with minced garlic.
- Toast in the oven for about 5-7 minutes until golden and crispy.
- Combine the diced tomatoes, basil, balsamic vinegar, salt, and pepper in a bowl.
- Remove the toasts from the oven, and generously slather each slice with the tomato mixture.
- Sprinkle with grated Parmesan cheese on top.
- Serve immediately while the toasts are still warm.
Notes
Make the tomato mixture a few hours ahead for convenience. Experiment with toppings for different flavors.
