Description

A vibrant and comforting Black Bean Salad packed with fresh ingredients and a zesty lime dressing.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 ripe avocado, diced
  • 1 cup cooked rice
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions
