  • 2 tablespoons prepared horseradish
  • 1 clove garlic (minced)

  • Pinch of cayenne pepper
  • 1 large sweet onion
  • 2 cups all-purpose flour
  • 2 teaspoons seasoned salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon cayenne pepper
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • 1 cup buttermilk
  • 1 large egg
  • Oil for frying

Instructions

  1. Prepare the Dipping Sauce: In a bowl, whisk together the mayonnaise, sour cream, ketchup, horseradish, minced garlic, salt, pepper, paprika, and cayenne until smooth. Cover with plastic wrap and place in the refrigerator until you are ready to serve.
  2. Cut the Onion: Cut the root end off the onion and peel away the outer layers. Cut the onion in half, then into quarters. Finally, cut the quarters in half to create your onion petals, and set aside.
  3. Mix the Flour Coating: In a large bowl, combine the flour, seasoned salt, pepper, garlic powder, cayenne pepper, onion powder, and smoked paprika. Stir until well combined.
  4. Prepare the Buttermilk Mixture: In another medium-sized bowl, whisk together the buttermilk and egg until smooth.
  5. Coat the Onion Petals: Separate the onion petals and place them in a gallon-sized zip-top bag. Add ¼ cup of the flour mixture to the bag, seal it, and toss the petals until they’re coated as best you can.
  6. Dredge in Buttermilk: Take a handful of onion petals at a time, gently shaking off the excess flour. Dip them into the buttermilk mixture, letting any excess liquid drip off.
  7. Coat Again: Next, add the dipped onion petals directly to the bowl with the flour mixture, coating them well. Shake off any excess flour again and place the coated petals onto a parchment-lined sheet tray while you continue coating the rest.
  8. Heat the Oil: In a deep fryer or a large skillet with deep sides, heat about 2 inches of oil to 350°F.
  9. Fry the Onion Petals: Once the oil is hot, fry the onion petals in batches for about 3-4 minutes until golden brown. Avoid overcrowding the pan for the best results.
  10. Drain the Oil: Place the fried onion petals onto a plate lined with paper towels to absorb any excess oil. For extra crispiness, transfer them to a wire rack over a sheet tray while frying the remaining petals.
  11. Serve: Once all the onion petals are fried, take out the dipping sauce from the refrigerator, serve, and enjoy every crispy bite!
