  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup oats
  • 1/2 cup brown sugar (for crumble)
  • 1/2 cup flour (for crumble)
  • 1/4 cup unsalted butter (for crumble)
  • 1 teaspoon cinnamon (for crumble)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract until combined.
  4. Combine the flour, baking soda, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the blueberries, letting their vibrant color shine through the dough.
  6. Mix oats, brown sugar, flour, butter, and cinnamon to make the crumble topping until crumbly.
  7. Drop spoonfuls of cookie dough onto the prepared baking sheet and sprinkle generously with crumble topping.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Allow to cool before serving.

Notes

You can prepare the dough a day in advance and keep it in the refrigerator. For longer storage, freeze the dough in scoops and bake as needed.
