Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in the vanilla extract until combined.
- Combine the flour, baking soda, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the blueberries, letting their vibrant color shine through the dough.
- Mix oats, brown sugar, flour, butter, and cinnamon to make the crumble topping until crumbly.
- Drop spoonfuls of cookie dough onto the prepared baking sheet and sprinkle generously with crumble topping.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow to cool before serving.
Notes
You can prepare the dough a day in advance and keep it in the refrigerator. For longer storage, freeze the dough in scoops and bake as needed.
