Ingredients

  • 1 ripe pineapple, peeled, cored, and sliced into rings
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • Coconut oil or cooking spray, for greasing the grill

Instructions

  1. Preheat the grill to medium-high heat.
  2. Combine brown sugar, ground cinnamon, and vanilla extract in a mixing bowl.
  3. Brush the pineapple rings with coconut oil or spray lightly with cooking spray.
  4. Sprinkle the brown sugar mixture over both sides of each pineapple ring.
  5. Grill the pineapple rings for about 3-4 minutes on each side until caramelized.
  6. Remove from the grill and allow to cool slightly before serving warm.
