Description

Warm and comforting dumplings filled with creamy cottage cheese or tofu and vibrant veggies, perfect for a cozy dinner.

Ingredients

Scale
  • 1 small head of cabbage
  • 1 cup of cottage cheese or tofu
  • 1 cup of finely chopped vegetables (carrots, spinach, or mushrooms)
  • 1 egg (optional)
  • Salt and pepper to taste
  • 2 tablespoons of soy sauce
  • 1 tablespoon of olive oil
  • Dumpling wrappers (or make your own)

Instructions

  1. Begin by boiling a large pot of water. Meanwhile, core the cabbage and carefully separate the leaves. Blanch the cabbage leaves in boiling water for 2-3 minutes until softened. Remove and set aside to cool.
  2. In a bowl, mix cottage cheese (or tofu), chopped vegetables, egg (if using), salt, and pepper together until well combined.
  3. Take a cabbage leaf and place a spoonful of the filling at the base of the leaf. Fold in the sides and roll up tightly to form a dumpling. Repeat with remaining leaves and filling.
  4. Heat olive oil in a pan over medium heat. Place dumplings seam side down and cook for 3-4 minutes until golden.
  5. Add soy sauce and a few tablespoons of water to the pan, cover, and steam for an additional 5-7 minutes. Serve warm and enjoy the comforting aroma as they cook!

Notes

These dumplings can be prepared ahead of time! Just store uncooked dumplings in the freezer and steam them directly from frozen. You can swap cottage cheese for ricotta or cream cheese, and tofu can be replaced with mashed chickpeas.
