Description

A warm and creamy blend of sweet carrots and crisp apples, perfect for a cozy meal.


Ingredients

Scale
  • 2 cups carrots, chopped
  • 2 apples, peeled and chopped
  • 4 cups vegetable or chicken broth
  • 1 cup fat-free half and half
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground ginger
  • 1 tablespoon olive oil (optional)

Instructions

  1. Heat olive oil over medium heat in a large pot. Add the chopped carrots and apples, and sauté for about 5 minutes.
  2. Pour in the broth and bring to a boil. Reduce heat and let it simmer for 20 minutes.
  3. Use an immersion blender to puree the soup until smooth.
  4. Stir in the fat-free half and half, salt, pepper, and ground ginger.
  5. Heat through and serve warm, garnished with fresh herbs or a sprinkle of black pepper.

Notes

This soup can be made ahead of time and tastes better the next day. Store leftovers in the refrigerator for up to 5 days or freeze for longer storage.
