Ingredients

- 2 cups carrots, chopped
- 2 apples, peeled and chopped
- 4 cups vegetable or chicken broth
- 1 cup fat-free half and half
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground ginger
- 1 tablespoon olive oil (optional)
Instructions
- Heat olive oil over medium heat in a large pot. Add the chopped carrots and apples, and sauté for about 5 minutes.
- Pour in the broth and bring to a boil. Reduce heat and let it simmer for 20 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in the fat-free half and half, salt, pepper, and ground ginger.
- Heat through and serve warm, garnished with fresh herbs or a sprinkle of black pepper.
Notes
This soup can be made ahead of time and tastes better the next day. Store leftovers in the refrigerator for up to 5 days or freeze for longer storage.
