Description

A refreshing Chickpea Cucumber Salad that comes together in just 10 minutes, making it perfect for any season.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the rinsed chickpeas, diced cucumber, halved cherry tomatoes, crumbled feta cheese, chopped parsley, and finely chopped red onion.
  2. In a small bowl, whisk together the olive oil and lemon juice.
  3. Pour the dressing over the salad, and sprinkle with salt and pepper to taste.
  4. Toss everything gently to combine, making sure each ingredient is generously coated.
  5. Enjoy right away, or refrigerate for up to two days for a chilled, refreshing treat.
