- 1 1/2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 1 cup fresh raspberries
- 8 oz dark chocolate, chopped
- 1 cup heavy cream
- 1/2 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine chocolate cookie crumbs with melted butter. Use your fingers to press the mixture evenly into the bottom of a tart pan. Bake for 15 minutes.
- Heat the heavy cream in a saucepan until it just begins to boil. Pour it over the chopped dark chocolate in a bowl, and allow it to sit for 5 minutes. Stir gently until smooth.
- Add the powdered sugar into the chocolate mixture. Stir until well combined.
- Arrange the fresh raspberries in the baked crust, then pour the chocolate filling over them.
- Chill the tart in the refrigerator for at least 2 hours to set.
Notes
This tart can be made a day in advance. Store covered in the refrigerator. Serve chilled or at room temperature.
