Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 lb ground beef
- 1 can (28 ounces) crushed tomatoes
- 2 tablespoons tomato paste
- 1 cup vegetable broth (for non-alcohol substitute)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Parmesan cheese, for serving
- Cooked pasta, for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; sauté until soft, about 5-7 minutes.
- Stir in garlic and cook for another minute until fragrant.
- Add ground beef and cook until browned, breaking it up with a spoon.
- Stir in crushed tomatoes, tomato paste, broth, oregano, basil, salt, and pepper.
- Bring to a simmer and cook for at least 30 minutes, stirring occasionally.
- Serve over cooked pasta and top with freshly grated Parmesan cheese.
Notes
Make ahead for better flavor. Can be stored in the fridge for 3 days or frozen for up to 3 months.
