Ingredients

- 8 slices of whole grain bread
- 8 slices of turkey bacon
- 1 large tomato, sliced
- 1 avocado, sliced or mashed
- 1 cup crisp lettuce (like romaine or butter lettuce)
- 1/4 cup mayonnaise (or Greek yogurt)
- Salt and pepper, to taste
- Optional: slices of cheese (cheddar or Swiss)
Instructions
- Cook the turkey bacon in a skillet over medium heat until crispy, about 5-7 minutes. Set aside on paper towels to drain excess grease.
- Toast your slices of whole grain bread until golden and crispy.
- Prepare the tomato and avocado. If using, season the avocado with salt and pepper.
- Assemble the sandwich by spreading mayonnaise on one slice of toast. Add lettuce, turkey bacon, tomato, and avocado.
- Build height by spreading mayonnaise on another piece of toast and stacking it on top. Repeat layering with lettuce, bacon, tomato, and avocado.
- Finish with a final slice of toast, secure with toothpicks, and slice diagonally to reveal the layers.
Notes
Assemble the sandwich just before serving to keep the bread crispy. Use a serrated knife for clean slices.
