Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can coconut milk
  • 1 tbsp soy sauce
  • 1 tsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 cups cooked rice
  • 1 tbsp vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish

Instructions

  1. Prepare the chicken: Slice the boneless, skinless chicken breasts into bite-sized pieces. Season with salt and pepper.
  2. Sauté the aromatics: In a large pan, heat the vegetable oil (or coconut oil) over medium heat. Add in the minced garlic and grated ginger. Sauté until fragrant, about 1-2 minutes.
