Description

A cozy and nutritious baked oatmeal that combines the flavors of coffee cake, perfect for chilly mornings.

Ingredients

Scale
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups almond milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans, chopped
  • 2 tablespoons coconut oil, melted (optional)
  • 1/4 cup brown sugar (for streusel)
  • 1/4 cup flour (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with coconut oil.
  2. Mix together the rolled oats, baking powder, cinnamon, and salt in a large bowl, letting the warm spice aroma fill the air.
  3. Combine the almond milk, maple syrup, vanilla extract, and melted coconut oil in another bowl. Stir gently until well mixed.
  4. Pour the wet ingredients into the dry mixture and give it a gentle stir until just combined—try not to over-mix!
  5. Fold in the chopped pecans gently, imagining the crunchy bites waiting to be enjoyed.
  6. Pour the mixture into the greased baking dish and spread it evenly, feeling the comforting weight of the oats.
  7. Combine brown sugar and flour for the streusel topping in a small bowl, and sprinkle it generously over the oatmeal mixture.
  8. Bake for 30-35 minutes, or until the top is set and golden brown.
  9. Allow to cool briefly, then cut into squares and serve warm.

Notes

Store leftovers tightly covered in the fridge for 3-5 days. Warm slices in the microwave for a quick breakfast or snack.
