Ingredients

  • 1 cup cottage cheese
  • 1 cup marinara sauce
  • 1/2 cup chopped bell peppers
  • 1/2 cup sliced mushrooms
  • 1/2 cup chopped spinach or kale
  • 1/2 cup shredded mozzarella cheese
  • Olive oil, to taste
  • Salt, to taste
  • Pepper, to taste
  • Sliced olives, to taste
  • Diced onions, to taste
  • Fresh basil, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). In a bowl, combine the cottage cheese with a pinch of salt and pepper.
  2. Spread the cottage cheese mixture evenly in a baking dish. Pour the marinara sauce over the top.
  3. Scatter the chopped bell peppers, sliced mushrooms, and chopped spinach or kale over the sauce.
  4. Sprinkle the shredded mozzarella cheese generously over the entire bowl.
  5. Drizzle a little olive oil, and add additional salt, pepper, and your choice of sliced olives and diced onions.
  6. Bake for 20 minutes, or until the cheese is bubbly and golden.
  7. Remove from the oven and garnish with fresh basil. Serve immediately and enjoy!
