- 1 packet fajita seasoning
- 1 can black beans, rinsed and drained
- 1 cup corn
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup salsa
- Tortilla chips (optional for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the diced chicken in a large skillet over medium heat until browned and cooked through, about 6-8 minutes.
- Add the sliced peppers and onion to the skillet, sautéing until tender.
- Stir in the fajita seasoning, black beans, corn, and salsa, mixing well.
- Transfer the mixture to a baking dish, spreading it out evenly.
- Top with shredded cheese and bake in the preheated oven for 20-25 minutes or until cheese is bubbly and golden.
- Serve warm with tortilla chips on top, if desired.
