Ingredients

- 2 cups rolled oats
- 1 cup crispy rice cereal
- 1/2 cup honey or maple syrup
- 1/2 cup peanut butter or almond butter
- 1/2 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- Combine the rolled oats, crispy rice cereal, and salt in a large mixing bowl.
- Heat honey and peanut butter over low heat in a small saucepan until melted and mixed.
- Stir in the vanilla extract into the melted mixture.
- Pour the melted mixture over the dry ingredients, and stir until fully combined.
- Fold in mini chocolate chips.
- Press the mixture into the prepared baking dish evenly.
- Bake for 15-20 minutes, or until golden brown.
- Allow to cool completely in the dish before cutting into bars.
Notes
Make ahead and store in an airtight container for up to a week. Customize with your favorite mix-ins such as dried fruits or nuts.
