Description

Delicious and healthy homemade granola bars that are perfect for snacks or breakfast on the go.


Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup crispy rice cereal
  • 1/2 cup honey or maple syrup
  • 1/2 cup peanut butter or almond butter
  • 1/2 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. Combine the rolled oats, crispy rice cereal, and salt in a large mixing bowl.
  3. Heat honey and peanut butter over low heat in a small saucepan until melted and mixed.
  4. Stir in the vanilla extract into the melted mixture.
  5. Pour the melted mixture over the dry ingredients, and stir until fully combined.
  6. Fold in mini chocolate chips.
  7. Press the mixture into the prepared baking dish evenly.
  8. Bake for 15-20 minutes, or until golden brown.
  9. Allow to cool completely in the dish before cutting into bars.

Notes

Make ahead and store in an airtight container for up to a week. Customize with your favorite mix-ins such as dried fruits or nuts.
