- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup erythritol or preferred sweetener
- 1/2 cup butter, melted
- 8 oz cream cheese, softened
- 1 cup heavy cream
- 1/2 cup natural peanut butter
- 3/4 cup erythritol
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix together almond flour, cocoa powder, sweetener, and melted butter until well combined. Press this mixture into the bottom of a greased 9-inch springform pan to form a crust. Bake for 10 minutes and then let it cool.
- In a large mixing bowl, beat the softened cream cheese until smooth. Add the heavy cream, peanut butter, sweetener, vanilla extract, and salt. Mix until fully combined and fluffy, about 2-3 minutes.
- Pour the peanut butter cheesecake filling over the cooled crust and smooth out the top.
- Refrigerate for at least 4 hours or until set.
- Slice and serve.
