Description

A vibrant and nutritious salad packed with protein and fiber, perfect for busy weeknights and picnics.


Ingredients

  • 1 cup lentils
  • 2 cups water or vegetable broth
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup olives, sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse and drain the lentils. In a pot, combine the lentils and water or vegetable broth. Bring to a boil, then reduce to a simmer and cook for about 20-25 minutes, or until tender. Drain and let cool.
  2. In a large bowl, combine the cooled lentils, cucumber, bell pepper, cherry tomatoes, red onion, olives, and feta cheese (if using).
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the lentil mixture and toss to combine.
  4. Garnish with fresh parsley and serve chilled or at room temperature.

Notes

This salad tastes even better after it has had time to marinate in the fridge for a few hours, making it perfect for meal prep!
