- 1 cup all-purpose flour
- 1/2 cup oats
- 1/4 cup brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup yogurt
- 1/4 cup milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Grease a mini muffin tin or line it with mini cupcake liners.
- In a mixing bowl, whisk together the flour, oats, brown sugar, baking powder, baking soda, and salt until well combined.
- In a separate bowl, combine the yogurt, milk, vegetable oil, and vanilla extract. Mix until smooth and creamy.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined; lumps are fine.
- Gently fold in the mini chocolate chips.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 12-15 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool slightly in the tin before transferring them to a wire rack.

These muffins freeze wonderfully! Store extras in an airtight container for quick treats later.
