Description

A comforting twist on taco night, these Cozy Taco Muffins are quick, easy, and perfect for busy evenings.


Ingredients

  • Tortilla wraps
  • Ground beef or turkey
  • Taco seasoning
  • Shredded cheese
  • Bell peppers (optional)
  • Onion (optional)
  • Sour cream (for serving)
  • Lettuce (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cut tortilla wraps into muffin-sized circles and press them into a greased muffin tin.
  3. Brown the ground meat in a skillet over medium heat, then add the taco seasoning.
  4. Add diced bell peppers and onions (if using) to the meat.
  5. Spoon the meat mixture into the tortilla cups.
  6. Top generously with shredded cheese.
  7. Bake for 15-20 minutes or until cheese is melted and tortillas are golden brown.
  8. Remove from the oven, cool slightly, and serve with sour cream and lettuce.
