Deliciously warm zucchini fritters filled with fresh zucchini, garlic, and zesty feta, perfect for weeknight dinners or as a vibrant appetizer.

- 2 pounds zucchini
- 1 teaspoon salt
- 1 large egg
- 1 large red onion, thinly sliced
- 2 cloves garlic, grated
- 1 teaspoon dried oregano (or dill)
- ¾ cup all-purpose flour
- 2 teaspoons baking powder
- ¾ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons extra virgin olive oil
- 4 ounces crumbled feta cheese (optional)
Instructions
- Grate the zucchini and toss it with salt in a colander. Let it sit for 10 minutes to release excess water.
- Squeeze as much moisture from the zucchini as possible.
- In a bowl, beat the egg and mix in the zucchini, optional feta, red onion, garlic, oregano, flour, baking powder, salt, and pepper until combined.
- Heat olive oil in a skillet over medium-high heat. Drop spoonfuls of batter into the pan and flatten them gently. Cook for 3-4 minutes per side until golden and crispy.
- Transfer to a paper towel-lined plate and serve immediately, preferably with a dollop of yogurt or a squeeze of lemon for added zest!
Notes
Make ahead by preparing the batter in advance; store in the fridge for up to 24 hours. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 2 months.
