Description

Ingredients

  • 1 tablespoon baking powder

  • 1/2 cup unsalted butter, melted

  • 1 cup milk
  • 1 cup fresh cranberries, chopped
  • Zest of 1 orange
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar (for streusel)
  • 1/3 cup flour (for streusel)
  • 1/4 cup butter (for streusel)
  • 1 teaspoon cinnamon (for streusel)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Combine the flour, sugar, baking powder, and salt in a large bowl.
  3. Whisk together the melted butter, egg, milk, orange zest, and vanilla extract in another bowl until well blended.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the chopped cranberries.
  5. Mix the brown sugar, flour, butter, and cinnamon for the streusel until crumbly.
  6. Scoop the muffin batter into the prepared muffin tin, filling each liner about 3/4 full and sprinkle streusel topping on each muffin.
  7. Bake for 18-22 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
