- 1 cup sugar
- 1 tablespoon baking powder

- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 cup milk
- 1 cup fresh cranberries, chopped
- Zest of 1 orange
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar (for streusel)
- 1/3 cup flour (for streusel)
- 1/4 cup butter (for streusel)
- 1 teaspoon cinnamon (for streusel)
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- Combine the flour, sugar, baking powder, and salt in a large bowl.
- Whisk together the melted butter, egg, milk, orange zest, and vanilla extract in another bowl until well blended.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the chopped cranberries.
- Mix the brown sugar, flour, butter, and cinnamon for the streusel until crumbly.
- Scoop the muffin batter into the prepared muffin tin, filling each liner about 3/4 full and sprinkle streusel topping on each muffin.
- Bake for 18-22 minutes or until a toothpick comes out clean.
- Let cool before serving.
