Description

Crispy Potato Tacos filled with cheesy mashed potatoes and fried to golden perfection, perfect for an easy weeknight dinner or comforting snack.


Ingredients

  • 4 tortillas
  • 2 cups leftover mashed potatoes
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Heat the oil in a skillet over medium heat, enough to cover the bottom of the pan generously.
  2. Combine the leftover mashed potatoes, shredded cheese, chopped green onions, salt, and pepper in a bowl. Stir until well blended.
  3. Spoon the potato mixture onto half of each tortilla and fold them over.
  4. Fry the folded tacos in the skillet for about 3-4 minutes on each side, until they turn golden brown and crispy.
  5. Remove and drain on paper towels. Serve warm with sour cream.

Notes

Make-ahead: Prepare the potato mixture a day in advance. For leftovers, reheat in the oven for best texture.
