- 4 tortillas
- 2 cups leftover mashed potatoes
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/4 cup chopped green onions
- 1/4 cup sour cream
- Salt and pepper to taste
- Oil for frying
Instructions
- Heat the oil in a skillet over medium heat, enough to cover the bottom of the pan generously.
- Combine the leftover mashed potatoes, shredded cheese, chopped green onions, salt, and pepper in a bowl. Stir until well blended.
- Spoon the potato mixture onto half of each tortilla and fold them over.
- Fry the folded tacos in the skillet for about 3-4 minutes on each side, until they turn golden brown and crispy.
- Remove and drain on paper towels. Serve warm with sour cream.
Notes
Make-ahead: Prepare the potato mixture a day in advance. For leftovers, reheat in the oven for best texture.
