Description

A cozy and creamy soup that combines the flavors of Thai cooking with simple preparation.


Ingredients

Scale
  • 1 lb chicken breast
  • 1 can (14 oz) coconut milk
  • 4 cups chicken broth
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 2 cups mixed vegetables (carrots, bell peppers, snap peas)
  • 2 teaspoons fresh ginger, minced
  • 1 lime, juiced
  • Fresh cilantro for garnish

Instructions

  1. Combine chicken breast, coconut milk, chicken broth, red curry paste, and fish sauce in a crockpot.
  2. Add mixed vegetables and minced ginger to the pot.
  3. Set the crockpot to low and cook for 6-8 hours.
  4. Remove the chicken and shred it using two forks.
  5. Return shredded chicken to the broth and stir in lime juice. Serve hot with cilantro.

Notes

This soup freezes beautifully. Adjust spiciness with additional coconut milk or broth.
