- 1 lb chicken breast
- 1 can (14 oz) coconut milk
- 4 cups chicken broth
- 2 tablespoons red curry paste
- 1 tablespoon fish sauce
- 2 cups mixed vegetables (carrots, bell peppers, snap peas)
- 2 teaspoons fresh ginger, minced
- 1 lime, juiced
- Fresh cilantro for garnish
Instructions
- Combine chicken breast, coconut milk, chicken broth, red curry paste, and fish sauce in a crockpot.
- Add mixed vegetables and minced ginger to the pot.
- Set the crockpot to low and cook for 6-8 hours.
- Remove the chicken and shred it using two forks.
- Return shredded chicken to the broth and stir in lime juice. Serve hot with cilantro.
Notes
This soup freezes beautifully. Adjust spiciness with additional coconut milk or broth.
