- 4 chicken breasts
- 4 slices of turkey bacon
- 1 cup mushrooms, sliced
- 1 cup vegetable broth
- 1 cup chicken broth
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pan.
- Season the chicken breasts generously with salt and pepper, and add them to the skillet. Cook until golden brown on both sides, about 6-8 minutes per side.
- Remove the chicken from the skillet and set aside. In the same skillet, add the sliced mushrooms and sauté until soft and fragrant.
- Pour in the vegetable broth and chicken broth, making sure to scrape up any browned bits from the bottom of the pan. Bring to a gentle simmer, allowing those flavors to meld.
- Return the chicken to the skillet, cover, and let it simmer for about 10-15 minutes, until the chicken is cooked through and juicy.
- Stir in the butter to create a silky sauce, then crumble the crispy turkey bacon on top for added crunch.
- Garnish with fresh parsley before serving.
