Description

Delicious and easy-to-make egg bites packed with spinach and bell peppers, perfect for breakfast or brunch.


Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheese (cheddar or your favorite cheese)
  • 1 cup fresh spinach (chopped)
  • 1/2 cup bell peppers (diced)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the eggs and milk until well combined and slightly frothy.
  3. Stir in the cheese, chopped spinach, and diced bell peppers until evenly mixed.
  4. Season with salt and pepper according to your taste preferences.
  5. Grease a muffin tin with cooking spray or a little oil, then pour the mixture evenly into the molds, filling each about three-quarters full.
  6. Bake for 15 minutes or until set and lightly golden on top.
  7. Let cool for a few minutes before removing from the tin and serving warm.

Notes

Make ahead by preparing the egg mixture the night before. Store leftovers in an airtight container for up to 4 days or freeze them for longer storage.
