- 6 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheese (cheddar or your favorite cheese)
- 1 cup fresh spinach (chopped)
- 1/2 cup bell peppers (diced)
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together the eggs and milk until well combined and slightly frothy.
- Stir in the cheese, chopped spinach, and diced bell peppers until evenly mixed.
- Season with salt and pepper according to your taste preferences.
- Grease a muffin tin with cooking spray or a little oil, then pour the mixture evenly into the molds, filling each about three-quarters full.
- Bake for 15 minutes or until set and lightly golden on top.
- Let cool for a few minutes before removing from the tin and serving warm.
Notes
Make ahead by preparing the egg mixture the night before. Store leftovers in an airtight container for up to 4 days or freeze them for longer storage.
