Description

A comforting and easy freezer-friendly meatloaf recipe that’s perfect for busy weeknights.

Ingredients

Scale
  • 2 pounds ground beef
  • 1 cup breadcrumbs (or crushed crackers)
  • 1 cup milk
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 cup ketchup (plus extra for topping)
  • 2 tablespoons Worcestershire sauce
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by lightly greasing it with cooking spray.
  2. Combine the ground beef, breadcrumbs, milk, diced onion, minced garlic, eggs, salt, pepper, oregano, ketchup, and Worcestershire sauce in a large mixing bowl. Mix until well incorporated.
  3. Transfer the meat mixture into the prepared loaf pan, shaping it into a loaf. Spread extra ketchup over the top.
  4. Bake in the preheated oven for about 1 hour, or until the meatloaf is cooked through.
  5. Allow to rest for 10-15 minutes before slicing. Serve warm, garnished with parsley if desired.

Notes

For perfectly clean slices, use a sharp knife dipped in warm water before cutting. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months.
