Description

Comforting sticky chicken thighs coated in a honey-soy glaze, served with roasted vegetables and fluffy brown rice.


Ingredients

  • 2 pounds chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon sesame oil
  • 2 cups broccoli florets
  • 1 cup carrots, sliced
  • 1 cup cooked brown rice
  • Sesame seeds for garnish
  • Green onions for garnish

Instructions

  1. Mix together the soy sauce, honey, minced garlic, grated ginger, and sesame oil to create a delicious marinade.
  2. Marinate the chicken thighs in this mixture for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C) while the chicken marinates.
  4. Place the marinated chicken on a baking sheet and roast for 25-30 minutes until cooked through.
  5. Add the broccoli and sliced carrots to the baking sheet to roast with the chicken during the last 10 minutes of cooking.
  6. Prepare the brown rice according to package instructions.
  7. Serve the sliced chicken over brown rice, topped with roasted veggies, sesame seeds, and green onions.

Notes

Marinate chicken overnight for maximum flavor. Leftovers can be stored in the refrigerator for up to four days.
