- 2 cups fresh or canned peaches, sliced
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 cup brown sugar
- 1/2 cup rolled oats
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Mix together the melted butter, granulated sugar, and egg until well combined.
- Add the flour, baking powder, salt, and vanilla extract. Stir until just combined.
- Pour half of the batter into the prepared pan and spread it evenly.
- Layer the sliced peaches over the batter.
- Combine the brown sugar, rolled oats, ground cinnamon, and the remaining batter in a small bowl.
- Crumble this mixture over the peaches.
- Bake for 35-40 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
Can be made a day in advance and stored in the fridge. For best results, let it cool completely before slicing.
