Description

A delightful peach cake with a crumbly topping, perfect for sharing and reliving the warmth of summer memories.


Ingredients

  • 2 cups fresh or canned peaches, sliced
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Mix together the melted butter, granulated sugar, and egg until well combined.
  3. Add the flour, baking powder, salt, and vanilla extract. Stir until just combined.
  4. Pour half of the batter into the prepared pan and spread it evenly.
  5. Layer the sliced peaches over the batter.
  6. Combine the brown sugar, rolled oats, ground cinnamon, and the remaining batter in a small bowl.
  7. Crumble this mixture over the peaches.
  8. Bake for 35-40 minutes or until a toothpick comes out clean.
  9. Let cool before serving.

Notes

Can be made a day in advance and stored in the fridge. For best results, let it cool completely before slicing.
