Description

A comforting and quick shrimp fried rice that combines tender shrimp, vibrant vegetables, and flavorful soy sauce, perfect for busy weeknights.


Ingredients

  • 2 cups cooked rice
  • 1 cup shrimp, peeled and deveined
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the shrimp and cook until they turn pink, about 3-4 minutes.
  3. Push the shrimp to one side of the skillet, then scramble the eggs in the empty space until fully cooked.
  4. Mix the eggs with the shrimp to meld the flavors.
  5. Add the cooked rice and mixed vegetables, then pour in the soy sauce. Stir to combine and heat through.
  6. Season with salt and pepper to taste.
  7. Garnish with sliced green onions before serving.

Notes

Use leftover rice for best results. Adjust vegetables to your preference.
