- 1 cup shrimp, peeled and deveined
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the shrimp and cook until they turn pink, about 3-4 minutes.
- Push the shrimp to one side of the skillet, then scramble the eggs in the empty space until fully cooked.
- Mix the eggs with the shrimp to meld the flavors.
- Add the cooked rice and mixed vegetables, then pour in the soy sauce. Stir to combine and heat through.
- Season with salt and pepper to taste.
- Garnish with sliced green onions before serving.
Notes
