- 2 cups fresh peaches, diced
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon

- 1 large egg
- 1 cup milk
- Oil for frying
- Powdered sugar for dusting
Instructions
- Mix the flour, sugar, baking powder, cinnamon, and salt together until well combined.
- Whisk together the egg and milk in another bowl. Then, add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the diced peaches, ensuring evenly distribution throughout the batter.
- Heat about two inches of oil in a deep fryer or heavy pot to 350°F (175°C).
- Drop spoonfuls of batter into the hot oil, frying until golden brown, about 3 minutes on each side.
- Remove the fritters and drain on paper towels.
- Dust with powdered sugar before serving.
Notes
For even-sized fritters, use a small ice cream scoop to drop the batter into the hot oil.
