Description
A delightful summer dish featuring grilled zucchini topped with creamy goat cheese, fresh basil, and a drizzle of honey.
Ingredients
Scale
- 5 medium zucchinis
- Salt, to taste
- 1 Tbsp olive oil or avocado oil
- 1/3 cup goat cheese, crumbled
- 2 Tbsp fresh basil, chopped
- 1.5 Tbsp honey
- Salt & pepper, to taste
Instructions
- Prep the zucchini: Remove the ends from the zucchini and slice them into 1/2-inch pieces, lengthwise. Spread the sliced zucchini on a plate or cutting board, sprinkling salt liberally over the top. Allow it to sit for 20 minutes to drain out excess water. Pat dry using a clean cloth or paper towel.
- Heat the grill: Preheat your grill or grill pan to medium-high heat.
- Oil the zucchini: Brush olive oil or avocado oil onto both sides of each zucchini slice to enhance the grill marks and flavor.
- Grill to perfection: Place the oiled zucchini slices onto the grill. Cook for 10-15 minutes, flipping halfway through until the zucchini is tender and beautiful grill marks appear. Be cautious not to over-cook!
- Assemble your dish: Once grilled, remove the zucchini from the grill and arrange on a large plate. Sprinkle with crumbled goat cheese and freshly chopped basil.
- Finish with honey: Drizzle honey over the top and season with salt and pepper to your taste. Enjoy!
