Description

A delightful summer dish featuring grilled zucchini topped with creamy goat cheese, fresh basil, and a drizzle of honey.


Ingredients

Scale
  • 5 medium zucchinis
  • Salt, to taste
  • 1 Tbsp olive oil or avocado oil
  • 1/3 cup goat cheese, crumbled
  • 2 Tbsp fresh basil, chopped
  • 1.5 Tbsp honey
  • Salt & pepper, to taste

Instructions

  1. Prep the zucchini: Remove the ends from the zucchini and slice them into 1/2-inch pieces, lengthwise. Spread the sliced zucchini on a plate or cutting board, sprinkling salt liberally over the top. Allow it to sit for 20 minutes to drain out excess water. Pat dry using a clean cloth or paper towel.
  2. Heat the grill: Preheat your grill or grill pan to medium-high heat.
  3. Oil the zucchini: Brush olive oil or avocado oil onto both sides of each zucchini slice to enhance the grill marks and flavor.
  4. Grill to perfection: Place the oiled zucchini slices onto the grill. Cook for 10-15 minutes, flipping halfway through until the zucchini is tender and beautiful grill marks appear. Be cautious not to over-cook!
  5. Assemble your dish: Once grilled, remove the zucchini from the grill and arrange on a large plate. Sprinkle with crumbled goat cheese and freshly chopped basil.
  6. Finish with honey: Drizzle honey over the top and season with salt and pepper to your taste. Enjoy!

Notes

Make ahead by prepping zucchini slices a few hours in advance. Storage: Leftovers can be kept in an airtight container in the fridge for up to 3 days.
